Cook with Low to Medium heat, add olive oil, or your preference, before placing food in the pan and give food about a minute or 2 before you start pushing it around with a spatula. This pan retains heat very well, and even on low heat will continue to get hot and hotter, so if you have it on medium/high you’re going to burn the food that touches the pan and undercook the middle of your food, then you get sticky messes. The picture I’m attaching is the pan after frying an egg and toasting buttered bread for breakfast and searing a skirt steak, tomatoes and shallots the evening before. To clean, all I did was once i served the food I had cooked in it I ran it under hot water in the sink and just about everything immediately rinsed away. Very few matte spots remained near the center where the pan would have been over the burner but I put the pan on medium with a centimeter layer of water, brought to a boil, poured the hot water out and with a gentle scrub with sea salt, water and paper towel it looked good as new. This boiling step was probably unnecessary, and if this were my lodge cast iron I would have stopped with the initial rinse - but the fact this is Le Creuset makes me feel a little more precious about it and want it looking as good as new as long as possible. So if you’re nervous about Le Creuset but want cast iron, get the Lodge Chef Collection - you get the same shape, sides and spouts but without the price tag or to worry about, and it’s preseasoned so you don’t have to worry about enamel integrity or seasoning as much, and an American tradition. But the surface is not as smooth as Le Creuset’s enamel (which actually if you think about it means food has less surface area to stick to), but you don’t get the fancy punchy colors. Since I mainly cook for myself the 9” skillet is a true Goldilocks for me, 8” skillets are too small and awkward, 10” border on too big or I end up cooking too much food so this LC is perfect for me and not an easy cast iron skillet size to find. I wish I could have been content with a much cheaper cast iron pan because I do find myself wincing if I scrape the pan on the stove top or bang into the back of the sink, but yet to see damage - again, not something I’d be worried about with a simple cast iron... but man this enamel sure does feel nice.

This is a beautiful pan (I love Le Creuset colors and cooking quality ... I use butter and have no sticking problems) - but it arrived damaged (enamel chipped ... looks like it was damaged when they boxed it up, bad QA) so I have returned it - Market Warehouse (via Amazon) had no replacement pan this size available, and I decided the next size up which they offered me (no additional cost) was too large for my single induction burner.
