Mauviel, the renowned copper cookware manufacturer in France, presents M'steel. M'steel is a collection of frying pans and crepe pans made of extra thick Black Steel with riveted steel handles. The Black Steel, carbon steel, is an excellent heat conductor and extremely durable. The steel withstands high temperatures allowing for longer preheating and thus excellent searing. M'steel is designed to work on all cooktops including induction and metal utensils are safe to use. Prior to first use, clean the pan with very hot water to remove the beeswax from the entire pan. The beeswax is used to prevent the pan from rusting and to save time when seasoning. If at first use, you notice any wax residue, use a paper towel to wipe your hot pan clean. for seasoning, cover the bottom of the pan with flavorless oil and heat for 5 minutes. Let the pan cool before draining the oil, and then wipe clean with paper towels. Repeat the process a second time and your pan is ready for use. After this process, the pan will acquire a natural nonstick property. After cooking, wash the pan in hot water, wipe with a soft sponge and dry thoroughly. Do not use dish soap and do not remove the black layer that forms at the bottom of the pan, it will make a solid film and create a non-stick surface. Dry thoroughly to prevent resulting and store in a dry area. The pan will darken with use, creating a naturally nonstick surface. Made in France.

This is a fantastic piece of cookware if you season it correctly. Mine turned out perfectly non-stick and will now be my "go to" pan for many dishes in the kitchen. Would suggest taking your time seasoning and following these steps:

1. Preheat the new pan in the oven @ 200 for about 30 min on a baking tray lined with partchment paper. This will soften the wax coating on the pan.

2. Under very hot water, wash the pan in soap and scrub with a brush or hard sponge to remove the beeswax. Suggest feeling with your fingers for smoothness inside and out. This will be a sign that you removed all the beeswax.

3. Back in the over @ 200 degrees for about 10 min or until dry.

4. Remove from oven and boost the temp to 500. Coat with Flax Seed Oil (Lightly) and put in the over upside down for about an hour.

5. Let the pan cool fully then repeat steps 3 & 4 about 3 or 4 total times.

Key is to have a LIGHT coverage of oil each time so it bonds to the pan. Too much and you will have challenges getting this seasoned correctly.

Nice pan. A bit heavier than I expected but no big deal. The quality seems quite good, it seasoned very well too. I own a few 1950 - something Griswold cast iron pans and thought I knew how to season a pan.

Just for kicks, before I seasoned this pan I researched the subject further and saw many references to using flaxseed oil and the "Vollrath method". This is truly the way to go, though rather than using my crappy electric stovetop, I used my oven. The pan is very well seasoned and I actually re-did my Griswolds using flaxseed oil and the same method. Quite pleased.

As a side note, Mauvial apparently does not offer lids for these frying pans, at least none that I could find for the 14" pan. We have a Wasserstrom Restaurant Supply here locally. I visited today and found a lid that fit this pan quite well. Coincidentally, it is made by Vollrath (I have absolutely no affiliation with the company). The part number on the lid is 67541. I imagine it's easily ordered online from either Amazon or someone else. Happy cooking!
