Lovely non-stick finish and beautiful looking pan. However the handle isn't resistant to the open flame of a gas stove. With first use, the kitchen smelled of burning plastic where the flame singed the handle... despite that the flame was on the lowest setting. Perhaps less of an issue with larger diameter pan.
I just used it for the first time and love it! I was hesitant to spend so much on a pan set but I decided to treat myself and my old one Lagostina was still working but it was starting to wear down.
My heat goes from 0-14. 14 for stir fry. I think usually I use 11 for my old Teflon non stick pan of the same size, this Greenpan I had it at 8 and it was too hot the butter browned as soon as it hit the pan, I might have to go down to 6.
They say this is due to the Thermolon ceramic coating, it's a better heat conductor. And it's true so go less than you usually do and play around. And take care of your non stick, not using abrasives when cleaning, letting it cool, and it'll last you for years.
ADVICE: Start lower heat than higher. On my stovetop, I pretty much half my temperature settings to work with this pan. My highest heat is 14, I basically never go higher than 6 with my greenpan.
Don't make grilled cheeses or any type of sandwich in this. It will burn so fast and stain (see update 3). Use a cast iron or a SS pan for that.
The light exterior also gets dirty fast, even if I'm careful there seems to get grease, butter stain on. I guess I never noticed it on darker pans. I use barkeeper's once in a while to clean the exterior though the logos & such under the pan is a perfect place for stains to stay and are pretty impossible to clean out. Not a big deal but thought I'd mention it.
UPDATE: I just used the big one and noticed a defect in the pan cooking surface, it's been dented or something
UPDATE 2: definitely needs oil, I feel after a first few times of using it it's gotten worse. It's still non-sticking but I feel there is more care needed but I feel if you follow all the instructions they provided: low heat, oil/butter, care for cleaning you'll be okay.
Eggs especially still do stick sometimes even with the oil/butter if you don't mix it around fast enough it tends to get stuck on the pan regardless but eggs are difficult to get non-stick anyway.
Update 3: The light interior isn't great. You can see everything. I'm questioning the quality of this non stick. I made a grilled cheese in it, medium heat, burned the first piece of toast and it has stained the light colored interior. I was told it's carbonization and nothing can fix it at this point.
Update 4: Light color exterior also prone to staining etc. Always have to keep clean. Not a massive issue in performance just an annoyance due to light color VS black. However, I'm now taking this item down to 1 star. I've never used anything hard (silicone or wood utensil for cooking, soft sponge side for cleaning and never shocked the pan) nor cooked anything hard in here. and there was 1 nick that was created not long ago after using this maybe 20 times. And now, after maybe 30 uses there are 2 more nicks in it!! I don't understand. That also means I ate those pieces..
This is the least durable most problematic pan and I've only owned it for a handful of months, I miss my Lagostina non stick pans I owned for a decade and I replaced that were fine, I just wanted something more green (less chemical supposedly). Massive regret on this purchase.
Update 5: Customer service is very slow & only OK, but I persisted and over the course of over 1 month (reached out oct 3 for a replacement and followed up few times, got a response oct 13), they told me they'd send a replacement. I didn't hear back again and reached out again, they told me there was a delay in shipment +2/3 weeks for delivery.
Heats very quickly and evenly, non stick as promised. Be careful to read instructions and as mentioned, not to put on too high a heat as the heat distribution is so strong it can burn. I did a lot of research to finally find this, a good pan without toxic chemical coating that's easy to clean and doesn't require as much maintenance like a cast iron. It delivered as promised.
the quality of the pan itself is great - nothing sticks, it distributes heat consistently. very easy to clean and a great size for about two eggs. my one gripe - i thought i was purchasing this to spice up my kitchen with a pretty turquoise pan. one of the reasons i spent so much $ on it. but when it arrived it was a black pan. not a huge deal but kind of a bummer.
I waited a few months before writing a review. Somehow this pan manages to both stick everything, and remain a non stick pan. I guess there is an art to using a ceramic coated pan? I haven't figured it out. I only cook eggs in this for my son, and 9/10 I cannot flip a fried egg without turning it into scrambled eggs and this only happens with this pan! I've tried to experiment with the heat, and it seems to work a bit better on a lower heat after it has been warmed but its quite frustrating as I usually cook on medium heat. Also the pan was not great value. Its tiny (I thought it was a medium sized pan when I first purchased it). I really wanted to love it but I don't. As far as clean up, yes it is non stick, everything washes off easily. Maybe you will have better luck.
